The hours passed quickly as John prepared the chocolate mousse in creamy dollops into tiny glass bowls shaped as seashells and stored them in the refrigerator. The chocolate shavings would be added later to maintain a fresh look. At the other station, Ruth and Loretta set up the cupcakes. The type of cupcake was baker’s choice, and Ruth decided almost instantly on raspberry to go with the chocolate mousse. But chocolate or vanilla cake was a more difficult choice. Loretta had suggested chocolate, but Ruth felt it was too much. Vanilla seemed like the obvious choice, but Ruth thought it was too basic.

Eventually, she opted for an old recipe she’d had created back in the days when she had her own business, “Baby Cakes.” It was called Raspberry Blossom Delight cupcakes. And it was a big hit with the community, especially since it was a seasonal treat—only available during July and August when raspberries were ripe for the picking. And she’d get them fresh from the vines.

The Raspberry Blossom Delight cupcakes consisted of a vanilla bean cake stuffed with raspberry cream—the delightful surprise—and topped with a sugary pink frosting, also made with raspberries.

Next, she’d use the bride’s favorite dark chocolate—Charfon Bergër—melt it and create small hearts that they’d place in the cake, and frosting that would add contrast for a beautiful and cohesive visual display.

As Ruth swirled the dark chocolate into smooth lines shaped into hearts on wax paper, Loretta piped the raspberry cream they’d made into each cake, getting them ready for the icing on top.

“All right, Ruth,” John said. “The mousse is done, and everything is in the fridge, ready for the chocolate shavings. Would you like to check them?”

Ruth was impressed by John’s speed. “No,” she said, “I trust that they look wonderful.” She had taste-tested the mousse earlier before he filled each bowl, and his mousse was just as good as Ruth’s, if not better. John had come a long way from his nervousness in the kitchen and constant slip-ups. Now he strutted around the kitchen with his head held high and with confidence.

John turned toward Loretta. “Is there anything I can help you with over here?”

Loretta piped cream into one of the small cakes and said, “These all need to be frosted.” There must have been over a hundred cakes sitting out, naked.

“Right,” John said.

“The icing is over there.” Loretta pointed to the huge bowl of freshly made pink icing.

John picked up the piping bag, spreading the opening in his hand and shoveling heaps of icing into it. When it was full, he pushed the icing to the tip and removed the air bubbles before artfully swirling the icing on top of each little cake. Ruth watched him for a moment. His movements were smooth and deliberate. He was a pro now, and Ruth cracked a small smile before focusing back on her own task. They had a small assembly line going—Loretta piped the cream into the cakes, John swirled the icing on top, and Ruth worked on the accents.
